*** Chicken Waldorf


  • 8 oz mixed baby greens
  • 2 cups red seedless grapes, halved
  • 2 fuji apples, chopped into bite-sized pieces
  • 2 ribs celery, sliced
  • 2/3 cup candied walnuts
  • 2 oz crumbled gorgonzola
  • 2 Tbsp balsamic vinegar
  • 1/4 cup dijon mustard
  • 1/2 Tbsp garlic, minced
  • 1/4 tsp ground black pepper
  • 1/8 tsp salt
  • 1/4 cup olive oil
  • (optional) 1 lb sliced grilled chicken breast
Whisk vinegar, mustard, garlic, and olive oil together. Add salt and pepper to taste. Chill.

When ready to serve, shake up the dressing, mix the rest of the ingredients.

Makes 4 servings, 10 WW PointsPlus each (13 if using chicken breast).
